ARABICA AND ROBUSTA
A matter of taste?
Coffee is a beverage brewed from roasted and ground beans of Coffea plants from the Rubiaceae, a family of plants with various species. However, just two of them are worldwide renowned, grown and commercialized: the Coffea Arabica and the Coffea Canephora (better known as Robusta). While not dissimilar in their botanical variety, Arabica and Robusta have little in common and their crossbreeding would lead to infertile hybrids.

The names of the two species comes from their countries of harvest and their place of loading. The differences can be mainly identified in their shape, size, and color: Arabica has bigger and oval-shaped beans, while Robusta’s ones are more circular. The taste of Arabica is more delicate, while Robusta has a full-bodied taste. But it’s also the caffeine content that has an effect on their taste and smell. The caffeine amount of Robusta beans (2-4%) is almost twice compared to Arabica beans (0,7%-1,5%): this confers a much stronger flavour to the former, while the latter keeps a softer aroma. However, while choosing between the two, it is important to pay attention to quality; it is hard to find the best 100% Arabica and, in order not to undermine the final taste, it is better to rely on the Espresso 0039 Coffee Masters which combine the body and the aroma of coffee with dedicated blends.

ARABICA

Among the different species of Coffea, Arabica is the most refined. From Ethiopia to Yemen, Arabica has travelled hundreds of miles.
The plant, mainly cultivated on the steep slopes of Latin America, is a 2-3 m tall evergreen plant which produces fragrant flowers generating sub-spherical drupes. Each of these fruits generates two parchment-like nuts, named parchments, which envelop their own bean. Arabica beans have flat and long shape that results in a greater quantity of oils and, subsequently, in a more aromatic taste.
Therefore, this coffee is sweeter, because of the higher sugar content, and less bitter, as a result of the lower caffeine content.
Covering 70% of the global production, Arabica is among the most expensive Coffea species. It needs a greater ripening during the delicate phase of roasting, with shorter and more precise timing, and requires high manual skills of the barista.

ROBUSTA

The Coffea Robusta, or Coffea Canephora, originates from Western Africa but it’s currently grown especially in Southeastern Asia: Vietnam is its main producer. From the evolutionary point of view, this plant is younger than Arabica the one and it is an allogamous species with 22 chromosomes (half those of Arabica), therefore requiring two plants for pollination and reproduction.
It mainly grows in the plains and it’s thereby easier to grow, it bears the climate and the soil’s dryness better, growing even at hilly altitudes with temperatures going from 24° to 30°C. When compared to Arabica, it is a more productive and fast-growing species and distinguishes itself for its resilience and resistance to diseases.
Coffee deriving from Robusta is full-bodied, creamy and contains more caffeine.
